  1. The classic chocolate scotcheroos (without any adulteration):

Ingredients:

  • corn syrup (light) 1 cup
  • sugar 1 cup
  • peanut butter 1 cup
  • Cocoa Krispies cereal (of Kellogg’s) 6 cups

Note: If you don’t get this one you may also use 6 cups Kellogg’s Rice Krispies cereal instead.

  • sweet (semi) chocolate morsels 1 packet
  • butterscotch chips 1 cup

Cooking procedure:

  • In a three quart saucepan, pour the corn syrup and sugar and stir well in medium heat.
  • You can put off the heat as the sugar dissolves in and after the mixture has got cooked.
  • Now stir some peanut butter and mix well.
  • Put rice Krispies cereal and then stir well.
  • Next, you have to put the mixture into a pan with dimensions 13*9*2 inches with a coating of cooking spray and keep it away for some time.
  • Now, in a one quart saucepan you have to cook chocolate along with butterscotch chips, making sure that the heat is not too high.
  • Spread the chocolate mixture evenly over the cereal mixture you have kept aside.
  • After it cools down, you can slice them up into bars of size 2*1 inch each.

Ingredients:

  • Sugar 1 cup
  • rice syrup 1 cup (light corn syrup can also be used instead)
  • peanut butter ½ cup
  • Nutella ½ cup. If you don’t find Nutella, you may jolly-well go with any similar mixture of chocolate and hazelnut
  • crisp chocolate seasoned rice cereal 6 cups
  • Chopped sweet (semi) chocolate 6 ounces. Alternatively, you could use 1 cup chocolate chips
  • Butterscotch seasoned chips 1 cup

 

Cooking procedure: 

  • You need to apply butter on a 9*13 inch baking pan.
  • Boil sugar and rice or corn syrup in a six quart sauce pan.
  • In the absence of heat, put peanut butter and Nutella in the mixture and then stir well till they’re coated.
  • Pour the mixture into the baking pan after smoothening the top part and then keep aside.
  • Now, you have to melt chocolate and butterscotch chips in a bowl inside microwave or a double boiler, whichever you find convenient. Keep mixing well until it makes a fine blend.
  • Next, you have to spread the chocolate mixture over and above the rice cereal mixture.
  • You may sprinkle a bit of salt before allowing it to cool for some time.

Finally, cut them into small pieces and serve your family or guests.

  1. No bake scotcheroo Bars recipe:

Ingredients:

  • Sugar 1 cup
  • karo corn syrup (white) 1 cup
  • creamy peanut butter 1 ½ cups
  • rice Krispies 6 cups
  • chocolate chips (milk) 1 cup
  • butterscotch chips 1 cup

 

Cooking procedure:

  • Heat sugar and karo syrup together in a heavy saucepan and keep stirring well.
  • Now put out the heat and stir in peanut butter. Check for consistency in the mixture and keep blending.
  • In a mixing bowl, put in the rice Krispies, all of it.
  • Now pour over the peanut mixture in the mixing bowl and mix together.
  • Now put the whole thing in a pan of size 9*13 inch after spraying a bit of cooking spray in it.
  • Melt chocolate and butterscotch chips together in microwave.

Ingredients:

  • corn syrup 1 cup
  • Sugar 1 cup
  • Peanut Butter 1 cup
  • Rice Cereal Krispy 4 cups
  • Chocolate Chips (milk) 6 ounces
  • Butterscotch Chips 6 ounces

If you wish for a milk based scotcheroos, you can have that too.

            Cooking procedure:

  • Pour the corn syrup and cup in a sauce pan and heat.
  • See if the sugar has completely dissolved and then pour peanut butter and keep stirring.
  • Put the mixture and cereal in a big bowl and then cool it for say ten minutes.
  • You may lay parchment paper on a cookie sheet to make some cereal balls and keep aside for cooling.
  • Now, melt chocolate and butterscotch in another bowl.
  • Next put those balls one at a time dipping on the chocolate and butterscotch mixture. Coat each ball well.
  • Place them on the cookie sheet and then allow it to cool for some time.
  • As and when the chocolate coat hardens, take them out and serve well.

Tip- Use a fork for coating and see that no excess chocolate is there which would otherwise spoil the look.

  1. No cook scotcheroos:

 

Ingredients:

  • white sugar ½ cup
  • corn syrup (light) ½ cup
  • smooth peanut butter ¾ cup
  • rice cereal Krispy 3 cups
  • chocolate chips (milk) ½ cup
  • butterscotch chips ½ cup

 

Cooking procedure:

  • Take a big glass bowl and mix sugar, corn syrup and peanut butter in it.
  • Put in the microwave and keep for a couple of minutes.
  • Add cereal to the peanut butter mixture.
  • Now put the whole thing in a pan of size 9*13 inches.
  • Next, mix both chocolate and butterscotch chips in another bowl and put in the microwave.
  • Heat for two minutes, and melt them.
  • Now spread the cereal evenly all over and then allow the dessert to cool.

When it’s hard and crispy, you can cut them into squares and have them as well as serve them.

  1. Vegan Scotcheroos:

 

Things you’ll need:

  • corn syrup 1 cup
  • Ground sugar 1 cup
  • peanut butter 1 cup
  • extracts of vanilla ½ teaspoon

 

Cooking procedure:

  • In a sauce pan, blend corn syrup and sugar and cook at low heat.
  • Stir well and then add peanut butter to the mixture.
  • Then put vanilla extract and mix till it forms a smooth paste.
  • As it boils, you have to put in rice Krispies and keep stirring.
  • On the other side, grease a baking pan with butter.
  • Now put the rice Krispy mixture in the pan and spread it evenly.
  • Allow it to cool for forty five minutes.

Tips:

  • For convenience, you may use a spatula to spread the mixture evenly.
  • Use pizza cutter to cut into pieces.

 

  1. Gluten-free scotcheroos:

Things you’ll need:

  • Gluten-Free Rice Krispies 6-8 cups
  • Peanut Butter (You may even go for nut-butter instead.) 1 ½ cups
  • Gluten-Free Butterscotch Chips –keep an eye for barley or malt 1 bag.  Alternatively you may use Peanut Butter chips.
  • Sweet (semi) Chocolate Chips 1 bag
  • Karo Corn Syrup (Light) 1 ½ cups
  • Brown Sugar 1 ½ cups
  • Butter spray for greasing purpose

 

 Cooking procedure:

  • Take a 9*13 inch pan and grease it with butter.
  • Heat karo syrup and brown sugar together in a saucepan until the sugar dissolves completely.
  • But you got to make sure that the syrup does not harden, which happens in case of excessive heat like boiling.
  • Now without any further heat, put peanut butter in the saucepan and mix well.
  • Stir gluten free rice Krispies in the pan.
  • Combine the chips and microwave it for thirty seconds.
  • Now put the chips mixture over rice Krispies and allow some time for cooling purpose.
  • After it has become hard, you may proceed with the knife and cut into pieces.

 

  1. Cheerio scotcheroos:

 Things you’ll need:

  • corn syrup (light) 1 cup
  • ground sugar 1 cup
  • peanut butter 1 cup
  • sweet(semi) chocolate chips 1 packet
  • butterscotch chips 1 packet
  • Cheerios cereal 4 cups

 

Cooking procedure:

  • Put a mixture of corn syrup and sugar in the microwave and boil for few minutes until sugar dissolves.
  • Now add peanut butter to the mixture and blend.
  • Put in cheerios cereal to mixture and stir well for a good coating.
  • Spread evenly in a spray coated pan.
  • Melt chocolate and butterscotch chips just as above and spread over mixture and serve after cooling.
  1. Cornflake scotcheroos:

Things you’ll need:

  • Instead of using rice cereals as you did for classic chocolate scotcheroos, you may go with corn flakes for a slightly different and innovative taste.

Cooking procedure:

  • Same as that for classic one.

 

  1. Oatmeal scotcheroos:

 

Things you’ll need:

  • Butter 1 cup
  • brown sugar 1 cup
  • sugar ½ cup
  • eggs 2
  • vanilla 1 ½ teaspoon
  • flour 1 ¾ cups
  • baking soda 1 teaspoon
  • salt 1 teaspoon
  • oatmeal 2 cups
  • butterscotch chips 2 cups

 

Cooking procedure:

  • Mix butter and sugar.
  • Make a smooth paste with egg and vanilla into the mixture.
  • Now add flour and baking soda with salt and mix well.
  • Add butterscotch chips and oatmeal and stir it.
  • Put the mixture in a greased cookie sheet and then bake in the over preheated at 350 degrees. It would take you around twenty minutes.
  • Finally when then are brown, cool and serve.
